British Prime Minister Earl Gray named this wildly popular tea after him in 1830, and it has been considered a classic English tea ever since. It is not a type of tea, but a taste, composed of a simple black tea, flavored with bergamot oil, aromatic and stimulating. Drink at breakfast and in the afternoon. Serve plain, without milk or lemon to capture the dominant notes.
