Anxi Tie Guan Yin
The infusion is golden yellow, clear and transparent. It gives off a rich scent of white flowers on the nose, and its presence on the palate is indicated by a slight vegetal bitterness, which precedes the blossoming of fruity notes such as peach, pear and guava. The flavors of a good Tie Guan Yin, like this vintage, are penetrating and very long in the mouth, leaving a sweet taste in the mouth, even after several infusions.
Remarks
After “Long Jing”, Tie Guan Yin is the Chinese tea name most frequently mentioned in China. Tie Guan Yin means “Iron Statue of Guan Yin”, Guan Yin being better known in the West as the Buddhist Goddess of Mercy, called Boddhisattva of Compassion in the Far East. We do not know if this tea owes its name to Emperor Qianlong of the Qing dynasty who would have been inspired by its density, or if it is to the presence of a temple dedicated to the Buddhist goddess of mercy near the first Tie Guan Yin tea plant exploited, which gave it this name. Still, tea plants of the Tie Guan Yin variety have been cultivated in Fujian since the beginning of the 18th century, the best vintages of this variety coming from southern Fujian, in the Anxi district. They are asexual trees, whose growth is relatively limited in height and the shiny leaves have a dark green color, an oval shape and serrated edges. The ends of the stems are purplish and can be recognized when looking at the infused leaves; they contribute to the aromatic richness of Tie Guan Yin teas.
The so-called fermentation process is interrupted when the degree of oxidation of the leaves reaches approximately 40%.
A quality vintage Tie Guan Yin like those of Master Tseng can be infused many times and lends itself particularly well to the Gong Fu Cha technique, infusions at high temperature in terracotta teapots allowing all the aromatic molecules to be extracted. of these very thick leaves.
The length in the mouth is one of the characteristics of this tea and some enthusiasts speak of the Tie Guan Yin “taste”.Details
