It is the most prestigious Japanese tea. First harvests only. The tea plants are deprived of light during the last three weeks before harvest. Gyokuro (literally “Jewel of Dew”) is a high-quality Japanese tea. To produce Gyokuro, 3 weeks before harvest, the tea plants are deprived of sunlight thanks to an arbor promoting the significant development, through photosynthesis, of caffeine and chlorophyll. This is what gives it this very particular color, this taste so fine, so sweet and so concentrated, this scent similar to blue leaves of algae. About 90% of sunlight is removed by artificial shade from straw or synthetics. This process reduces the tannin and anthocyanin content. The shoots will remain like this, in the shade, until harvest time. The harvest is manual. The leaves are steamed, dried and rolled. Like all shaded teas, Gyokuru contains a high level of theine, very rich in polyphenols. 1st infusion 3 minutes or up to 10 minutes to have the desired virtues.
